The carob beans begin their journey while they are still on the tree. Those with more pulp than seeds are selected and harvested only after they have been tanned by the sun, turning from green to deep brown.
The transformation from carob beans to concentrate takes place through a slow ultrasound extraction process. This technology gently extracts the nutrients from the fruit.
Everything is done strictly cold to avoid thermal stress on the precious vitamins and antioxidants. This results in a sweet molasses with the unmistakable, enveloping aroma of carob.
During each processing stage, the raw material is treated with extreme care, protecting it from thermal stress that would alter its organoleptic qualities.
The extract remains raw; it is never pasteurized or subjected to high temperatures. For this reason, very rigorous procedures are adopted for cleaning, preservation, and storage of the raw material.
